Description

This position is responsible for supporting the food and beverage directors at the property level by providing analysis of key financials and reports to achieve budgeted revenues and profitability. Attention to detail and strong work-ethic are essential for success. The position is responsible for short and long-term planning and the management of the Food & Beverage operations in the front and back of the house. Develops and recommends the budget, marketing plans and objectives and manages within those approved plans. Must meet goals related to profit, as well as guest, employee & owner satisfaction while driving quality for exceptional service.

ESSENTIAL JOB FUNCTIONS

  • Oversight of all Food and Beverage operations for the company. Frequent visits to properties working with General Managers and resort F&B operations team to ensure all standards are met according to corporate guidelines.
  • Evaluation of property performances gauged by 3 Elements of Satisfaction set forth upon Corporate Director of F&B. Customer Satisfaction, Employee Satisfaction and Financial Satisfaction are measured through various data.
  • Continue to develop, improve and implement core operating and service standards.
  • Work closely with the corporate team to ensure all F&B operations are adhering to respective department’s standards and offer support if necessary.
  • On-going evaluation of all vendor relationship and procurement of best products matched with the best price structure. Negotiate and maximize opportunities across all properties.
  • Stay current on latest trends and incorporate any new opportunities into appropriate operations.
  • Attend seminars, conferences if and when possible for further ideation, understanding of industry trends and patterns as well as networking opportunities.
  • Direct oversight of F&B operation for new projects. Oversight such as conceptual designs of outlets, establishing menu concepts through guidance and vision of the President and Vice President. Research and formulate entire F&B OS&E for the project under the parameter of the budget.
  • Work closely with the Project Manager for future projects from kitchen layout and designs as well as the functionality of all F&B space.
  • Weekly calls with property F&B Director’s and Executive Chefs to maintain close understanding of performance at each property and provide guidance for any immediate or forthcoming opportunities and/or challenges.
  • Monthly Corporate Food and Beverage calls with company-wide F&B Director’s and Executive Chef’s. Contents to include reviewing of financial results, customer satisfaction results through Unifocus surveys, 30/60/90 days forecasted business and more.
  • Facilitate bi-annual company F&B Leadership Conference. Conference contents entails introduction of new initiatives, review property performances, compare properties to seek best practices, team building for stronger brand standards and comprehension of Corporate F&B vision and more.
  • Full involvement of menu development, price structures as well as design of menus, marketing and promotional contents.
  • Active engagement and involvement with the F&B Director’s and Executive Chefs for identifying future leaders for the company.

EDUCATION/EXPERIENCE

Bachelor’s Degree (B.A. or B.S.) from a four-year college or university; or, five to seven years related experience and/or training; or, an equivalent combination of education and experience.

Must have food & beverage experience as at a luxury level hotel/resort.

LANGUAGE/COMMUNICATION SKILLS

  • Excellent written and verbal communication skills.
  • Must possess the ability to read and interpret documents in English such as safety rules, operating and maintenance instructions, and procedural manuals, newspapers, periodicals, journals, and manuals.
  • Must possess the ability to type routine reports, correspondence, business letters, budgets, summaries, and reports using prescribed formats and conforming to all rules of punctuation, grammar, diction, and style.
  • Must possess the ability to speak effectively before internal and external groups at all levels (executive to line level).

Must possess sufficient computer skills to use, in a proficient manner, all software programs used at the Company including, but not limited to, the following:

  • Thorough knowledge of e-mail platforms
  • Micros
  • Time keeper systems
